A Public Response to Carl Freeland, Owner of Organic Manic in SLC
After I published my review of Organic Manic in SLC, Carl Freeland (the owner of Organic Manic), responded to my review in a comment. I think that his comment needs to be addressed and I hope that he reads this post like he read my last post. As I stated in my original review, I think this restaurant has a novel concept and could go far if they implemented a few changes.

In response to your review,Organic Manic would like to explain the following:
We do not COOK anything!SORRY! - This is confusing to me on two levels. 1. There were obviously cooked soups stewing in crock pots at the restaurant. 2. He might be referring to the fact that I said the head chef "cooks all the food." I said that the restaurant was raw and define the term 'cook' as all-encompassing for preparing and creating all types of food. Certain people may make the distinction when talking about raw food, I do not.
The "LASAGNA" is made with no MUCUS FORMING CHEESE or pasta, but organic zucchini, basil and tomato sauce, and a walnut and oregano filling.
The "cheese" like recipe is made from CASHEW and NUTRITIONAL YEAST(extremely high in Vitamin B12), along with organic lemon or lime juices. It is a gluten free recipe, and is our #1 selling item. - I am vegan and am aware of the health affects of cow cheese, which is mucus-forming. I am also aware of the nutritional properties of many foods. I know I did not make this clear in my review, but I was writing a review not an endorsement of raw food living. I judge food based on its taste as well as its nutritional value, and in this case the taste did not live up to my expectations. Just because food is healthful does not mean it needs to be bland. I have visited plenty of raw restaurants that can make their food raw, healthful, and delicious.
Also, I am glad it is the #1 selling item. I think the customer response to this item reinforces my suggestion to include more pre-made items in the buffet.
In response to the "burger" it is made of Brazil nuts, almonds, and vegetables. It is NOT a BURGER, but a nutritious,alkalizing, nut and veggie patty. The word "BURGER"is never heard in our restaurant.
- I am sorry that the word burger is not cool with raw foodies. However, I think that the pedestrian person who comes into the restaurant is going to call it as they see it. I am also surprised that there were no comments made about my calling things onion rings and pizza. Maybe I should have called them 'nutritious, immune-boosting onion snacks'?
In response to our NO-FISH-SUSHI,sushi is not crispy!It is a complex recipe with over fourteen different ingredients, all highly nutritious and healing to the body. - This, I believe, is in response to me saying that the sushi was "wilty." I understand that sushi is not supposed to be crispy. However, when the nori on sushi becomes saturated with moisture, it becomes chewy and wilty. This is completely understandable since it was sitting in a buffet line and filled with live, hydrated foods. However that does not make it palatable and maybe it's not such a good choice in a buffet setting.
We have over sixty items in our buffet, 58 of them suitable for the gluten free diet. We are sorry that you were overwhelmed and could not catch the real concept of a RAW FOOD BUFFET. - I was overwhelmed, and I can imagine that many people who walk in to your restaurant are overwhelmed like I was. Not everyone who walks in will have the imagination and background to create tasteful dishes from your buffet as your master chef does. I still think that suggestions on how to combine ingredients and more pre-made dishes would be a good choice. If I may say so, I think that your goal is to bring people to raw food, not drive them away.
The food is prepared fresh every day by our staff who is directed by the "little, kind lady at the cash register",who happens to be a Master Herbalist and raw food chef for 15 years. - I am really sorry if this came across as offensive or demeaning, I absolutely did not mean for it to be so.
Our staff takes great pride in presenting fresh and raw, vegan, gourmet food to our customers.
Instead of sitting and waiting for a plate of food to be placed in front of you, please use your imagination to create YOUR OWN.
We understand that sixty items might be a bit overwhelming,but step out of the box and be creative for yourself! - See my comment above. I have had experience with raw food and do feel that I can think outside the box. I can only imagine what a person who is new to food and raw food would feel when they came in to your restaurant.
Because we are a FULL, RAW, VEGAN,BUFFET, we are providing to the public as much variety as can be produced in our facility for a very fair price.

So I went to the Fashion Place Mall in Sandy yesterday and wandered in to Sephora to see what kinds of make-up they carried. I was very surprised to see 100% vegan make-up line Urbay Decay have an entire section to itself! I was so excited I just had to buy some things to support...

Valentine's Day Trip to Las Vegas
Last weekend Ben and I went to Las Vegas for a quick Valentine's Day getaway. I've been working like crazy for the past three weeks (on call 24/7) and have been so stressed out I started to get really on edge at always be at the end of my rope. Ben suggested a getaway so we decided that Vegas was perfect (5-6 hr drive), and Valentine's Day was a perfect excuse.I took Friday off work and we headed down after leisurely getting ready that morning. We stopped in Cedar City for lunch at a little authentic Mexican place and got in to Vegas around 3 pm.

We honestly didn't do much while we were there. It was so nice to have nothing to do and nothing to think about (though I did get a few calls from work while I was there, yeesh!). We spent most of the time in our room (which had an awesome view! pics above and below) just being together and relaxing. We did walk the strip for a few hours which was entertaining, and got lots of yummy vegan food. We stopped by some of our favorite Vegas restaurants like RONALD'S DOUGHNUTS (vegan yeast doughnuts, YUM!), Veggie Delite, and a new favorite, Go Raw Cafe (reviews to come soon!).

VEGANIZED : The Ultimate Chocolate Chip Cookie n’ Oreo Fudge Brownie Bar
Yes, I totally veganized this monstrosity from the blog Kevin and Amanda that has been circling the internet. As soon as I saw it, I knew it needed to be done. I just had to have it.
And it turned out just like the picture. Ok, so it didn't LOOK just like the picture but it tasted as good as the picture looks... which is basically the same thing. Below are my pictures, which don't make it look as appetizing, but I promise you it was. I'm pretty sure I ate two of them within like 30 minutes.
1/2 this Brownie recipe
1/2 this Cookie recipe (you will have some extra)
1 pkg Vegan Oreos (whichever brand you like best)
Preheat oven to 350. Line a 9x9 pan with parchment paper or heavily grease it, as these tend to stick to the pan.
Fill the pan about 1 inch with cookie dough. Flatten the cookie dough down and add a layer of Oreos. Pour the brownie batter over the Oreos. Bake for 45-55 minutes. Let cool before attempting to cut.

VEGANIZED: My Mom's Chocolate Chip Cookies (the BEST)
About six months ago when Ben and I were planning the menu for our reception, we decided to include chocolate chips cookies (who doesn't like chocolate chip cookies??). We were going to make all the treats for our reception, so a few weeks before the wedding we started testing recipes to make sure they were all going to work.We had originally planned to use the cookie recipe from Vegan Cookies Invade Your Cookie Jar, so I wasn't too worried about it but we tested it anyway. They were HORRID. Seriously, gross. We even tried multiple times and they didn't turn out every time. Besides the wedding getting closer and closer, we really didn't have the money to keep buying ingredients and basically just throwing them in the trash.
So I decided to try veganizing my mom's recipe (not sure why I didn't think of that before...). The first time we tried it, it turned out amazing. These cookies are the best. They can be chewy or crunchy, depending on how long you cook them, and I think the chocolate chip to dough ratio is spot on. We ended up making a massive batch of them for our wedding (see picture above) and they were a huge success.
One thing to note before collecting all of the ingredients for this recipe is that it makes a massive bath of cookies. As I have mentioned before, my mom always cooks like she is feeding an army. So, if you want a huge batch of cookies to freeze or whatever, go for it. But you can always half the recipe for a pretty normal-sized batch of cookies.
1 1/2 C Sugar
2 C Brown sugar
3 Eggs worth of Ener-G Egg Replacer
2 Tbs Vanilla
2 tsp Baking soda
3 C Chocolate chips
6 C Flour
2 tsp Salt
1 lb Earth balance (four cubes)
Preheat your oven to 350. In a large bowl, cream the earth balance and sugar with a hand mixer or fork. Mix in the remaining ingredients. With a spoon, scoop balls of the dough and drop it on the cookie sheet. Bake cookies for 8-10 minutes for soft cookies, or longer for a bit crispier cookies.

ProBar's HALO Rocky Road bar
So I grabbed one of these while I was at Beans and Brews the other day because it looked interesting and I've always been really happy with ProBar's stuff. It said that it was 'sinfully healthy,' so I was expecting a rocky road-tasting bar with some kind of nuts and grains or something mixed in. Unfortunately it was not was I was expecting, but rather some kind of strange protein and grain bar that I think they attempted to make chocolatey tasting. I definitely did not see or taste any kind of mallow, which is essential for anything to be labelled rocky road. I personally wouldn't buy this bar again. It's not sinful enough for me, and if I wanted healthy I would just get a regular ProBar.

Ben's New Hair and a Hair Timeline
Ben got his hair cut over the weekend and it's... short! I'm still in shock. Ever since the first day I met him Ben has had long hair and it's such a change to see him with short hair. Cafe Supernatural in Salt Lake City, Utah
When Cafe Supernatural opened in SLC a few months ago, Ben and I decided to drop by and try it out. From what I had read I expected it to be Chef Brandt's (owner of Sage's and Vertical) venture in to the immensely popular 'healthy and hip cafe' trend that I see springing up everywhere. Not that I have a problem with this trend. I would much rather have brown rice than white in my dishes and do enjoy splurging on a meal that I feel good about afterwards. 'Healthy and hip' restaurants are actually normally my favorite type as the food is normally high-quality, healthily prepared, and the vibe of the restaurant is comfortable.When Ben and I got there is was what we expected. Located inside a yoga studio with retro decor, it was friendly and we were excited to try the food. The menu was a bit smaller than I expected and really only had a few options, none of which were overwhelmingly enticing. The prices looked good, though, at around or below $10 an entree. I ended up going for the Nirvana (above) and Ben got the Mesa Azul (not pictured).
I wasn't super happy once I actually saw my meal, though, since it rang up at $10 and was about 1 1/2 C of rice, lentils, and veggies. Ben's meal wasn't much bigger and I think would constitute as more of a snack than a meal.
Besides the portion size/price ration, the food was patronizingly bland. I added more salt and pepper than I usually eat in a day and it was still just barely palatable. Ben's was the same way but at least came with a side of sauce that, once it was properly doused in it, made the meal pretty good.
In the end, I would give Cafe Supernatural a 2/5. I think it has great potential but as a 'healthy and hip cafe' it definitely comes in last. The portions are tiny for the price you pay, and the food is bland. Maybe if the food hadn't been so awful I would have been willing to pay for it, but in it's current state I don't think I'll be going back.
